Cider Stardust is a cider made with 80% apples (Gloster, Cox and Aroma), 15% pear (Concorde), and 5% wild honey. After pressing the fruit, the juice underwent a three week long skin maceration with Cox and Gloster skins, to add some tannins and structure to the cuvee. At the same time, we co-fermented the Aroma apples with honey in our amphora, before blending the cuvee together.
Cider stardust is one of our bigger and more serious cuvees. Even though the honey has fermented out, the residual sugar from the pears maintains a lot of the flavor profile from the honey. 30 % of the Fruit is grown and picked by hand from our own orchard, Haväng, right by the Baltic Sea on the east coast of Skåne. The fruit is grown without adding any pesticides or herbicides. 70% is surplus fruit from local farmers in Österlen. The honey comes from lillgården in Höör.
