Whereas our cold climate does not suit chardonnay or pinot noir grapes, we look for apples, pears, plums, berries and the few grape varieties that grow naturally in our terroir. We make ciders based on apples and pears, such as our FWA series or Ciderevolution. We also make more boundary pushing co-fermented drinks such as Plumenian Rhapsody, Désincidre or Cider maybe where we blend apples, pears, plums and grapes together.
